Having cut her teeth at acclaimed restaurants such as Noma and The Fat Duck, Grant spent six years as head chef of a professional cycling team, meeting the dietary needs of elite riders competing in the world’s most grueling endurance races such as the Tour de France. In particular, she pioneered the use of “performance cooking” — focusing on both physical and mental well-being and changing for ever the way that pro cyclists eat.
A senior research fellow at the University of Waikato, in New Zealand, Sims is a pioneer in performance nutrition research. Working for both Stanford University and USA Cycling, she challenged existing dogma and propelled a new generation of hydration products.
In 2013, Grant and Sims joined forces and began to explore ways of improving rider performance by reducing the effects of physical stress and dehydration. They also started studying the effects of jet lag on athletes flying around the globe to compete and discovered that the body is much more affected by dehydration than was previously understood.
Their groundbreaking research led to two successful books and television series, before they developed ERW’s innovative Flight Pack, which combats the effects of jet lag. In 2018, they were joined by marketing expert Carl-Emil von Arenstorff.
